The freshest Chia Seed recipe to start the summer with

As the weather gets warmer we love to try out tasty new recipes using seasonal fruit and our favourite superfoods. Chia seeds are great for energy and a fantastic source of fibre, so we thought we’d share our fave way to whip them up for a light and summery dessert!

Chia seeds are not only a great gluten-free source of fibre, boasting 6g of fibre  per 1 tbsp serving but they’re a natural, vegan source of complete protein. Each serving is 20% protein and contains all 8 essential amino acids. They’re the richest plant source of Omega-3 as well as a great source of antioxidants that protect your body against free radical damage – now that certainly reinforces it’s popularly used ‘superfood’ status.

Chia seeds high fibre content and its ability to reduce blood sugar levels after meals inhibits appetite, making it the perfect food for healthy, effective weight loss.  You’ll also find yourself fuller a lot quicker due to Tryptophan, which is an amino acid that helps to regulate appetite, sleep and improve mood.

These are just a few of the reasons why we love Chia seeds, and a Chia pudding topped with seasonal fruits is the best dessert for a hot summer’s day!

It makes 2-3 servings so it’s one to surprise friends and family with… If you’re willing to share that is.

Ingredients:

1¼ cups rice or almond milk, you can add a little more if you need to thin out the pudding
¼ cup Good Health Chia seeds
1 tbsp pure maple or agave syrup
2 cups of seasonal fruits like strawberries, blueberries and raspberries
2 tbsp cacao powder if you like a ‘chocolate-y’ taste

Directions:

1. In a large bowl, whisk together all of the ingredients except the chia seeds, when all ingredients are added, stir in the chia seeds. Place in fridge for 1-2 hours, until thick (you can also leave this overnight).

2. Stir well, add more rice milk if desired, and serve chilled.

3. Top with delicious summer fruits! If you’re feeling extra decadent, you could top with some grated dark chocolate too. Enjoy!
