ANZAC Superfood Cookies Recipe
Ingredients
✓ 1/2 cup chopped almonds
✓ 1 1/2 cups quinoa flakes
✓ 1/2 tsp Good Health Maca Powder
✓ 1 tsp Good Health Chia Seeds
✓ 1/2 cup desiccated coconut
✓ 2 Tbs Good Health Manuka Honey or Maple Syrup
✓ 3 1/2 Tbs melted Good Health Coconut Oil

Directions
- Preheat the oven to 150°C
- Add of the dry ingredients (except the Chia Seeds) in a food processor and combine.
- Add the remaining ingredients to the food processor and pulse a few times to combine.
- You may need to add a small amount of water (1-2 Tbs) to the mixture so that the balls hold their shape.
- Roll the mixture into evenly sized balls and place them on a tray lined with baking paper.
- Flatten the balls into a cookie shape making sure that they do not touch.
- Bake for 20-30 minutes or until golden.
